Job Summary
- The Food & Beverage Cost Controller is responsible for monitoring and controlling the food and beverage costs of the estate’s hospitality operations.
- This includes analyzing daily operational costs, maintaining cost records, ensuring compliance with budgetary constraints, and collaborating with the F&B team to ensure optimal cost-efficiency without compromising service quality.Â
- The role plays a critical part in supporting financial accountability and profitability across all F&B outlets.
Key Responsibilities
- Monitor, record, and control all F&B stock movements and assist in monthly stock takes.
- Conduct daily and monthly cost analysis and report variances to the Finance Manager and complex Food & Beverage Manager.
- Ensure that proper receiving procedures are followed in line with company policy.
- Verify and audit daily food and beverage purchases and deliveries against purchase orders and invoices.
- Prepare and analyze daily, weekly, and monthly consumption and cost reports.
- Liaise with the culinary and F&B teams to ensure accurate recipe costing and updates.
- Track wastage, pilferage, and inventory discrepancies, and recommend corrective actions.
- Conduct spot checks and audits on inventory and storage areas to ensure compliance with internal controls.
- Monitor F&B operating equipment and support monthly asset count exercises.
- Review menu pricing and suggest revisions based on cost and profitability analysis.
- Assist in budget preparation, forecasting, and variance analysis specific to the F&B department.
- Ensure compliance with company policies, standards, and statutory financial regulations.
- Support the Finance Department in financial audits and external reviews.
Requirements
- Bachelor’s Degree or HND in Accounting, Finance, or related field.
- Minimum of 3 years’ experience in cost control within the hospitality industry.
- Experience working in a hotel, resort, or hospitality estate environment.
- Professional certification in accounting or cost control (e.g., ICAN, ACCA, or equivalent) is an advantage.
- Strong analytical skills and attention to detail.
- Proficiency in Microsoft Excel and accounting software (e.g., Sage, Opera, MICROS, or equivalent).
- Knowledge of inventory management systems and cost control procedures.
- Good communication and interpersonal skills.
- Integrity, professionalism, and ability to handle confidential information.
- Ability to work under pressure and meet deadlines.
- Flexibility to work weekends, holidays, and variable shifts based on business demands.
