We are recruiting to fill the position below:
Job Title: Senior Pastry Chef (Viennoiserie Expert)
Location: Lagos

Job Purpose
- The Senior Pastry Chef – Viennoiserie Expert will work with the viennoiserie section of the pastry kitchen, specializing in the production of high-quality, authentic French pastries including croissants, pain au chocolat, brioch and more.
- This role demands precision, creativity, consistency, and leadership to ensure that the Eric Kayser standard of excellence is maintained daily.
Key Responsibilities
Viennoiserie Production & Quality Control:
- Prepare and bake a variety of viennoiserie items from scratch (e.g., croissants, pain aux raisins, etc.).
- Ensure the correct lamination of dough and baking techniques are used to achieve consistent, high-quality results.
- Suggest new items in line with seasonal trends and customer preferences, while staying true to the Eric Kayser brand.
Kitchen Leadership:
- Supervise and guide the viennoiserie team to ensure smooth operations and production flow.
- Train junior pastry chefs and interns in the art of viennoiserie and ensure compliance with recipes and presentation standards.
- Ensure mise-en-place and prep work are completed in a timely and organized fashion.
Quality Assurance & Standards:
- Conduct daily quality checks and ensure that products meet set standards for texture, flavor, and appearance.
- Maintain high standards of hygiene, food safety, and equipment maintenance in accordance with company and health regulations.
- Monitor baking times, temperatures, and fermentation schedules.
Inventory & Ordering:
- Monitor stock levels and order ingredients specific to viennoiserie production.
- Ensure zero waste by properly managing excess dough, ingredients, and leftover products.
Collaboration:
- Work closely with the Executive Chef and Bakery Production Manager to ensure smooth kitchen operations.
- Coordinate with procurement and store teams to ensure availability of quality ingredients and packaging.
- Contribute to the planning of new bakery outlets or seasonal campaigns by providing product insights and samples.
Key Requirements
- Interested candidates should possess an HND qualification
- 5 – 7 years of experience in a professional bakery, with at least 3 years specializing in Viennoiserie.
- Deep knowledge of French pastry techniques and modern baking trends.
- Ability to manage a team and train others with a focus on discipline and skill development.
- Strong sense of precision, timing, and consistency.
- Ability to work early morning shifts and in a fast-paced production environment.
- High attention to cleanliness, organization, and food safety.
Salary
N300,000 – N350,000 monthly.
